grilled chuck roast
Roast—Liberally apply coarse salt to roast 45 minutes to 24 hours before grilling. Heat grill until it is thoroughly hot. Place chuck roast directly over the heat to sear both sides. Then move the roast away from the direct heat, turning as needed until desired internal temperature is reached. (130 degrees—rare, 135 –medium rare, 145—medium) Let the meat rest (15-30 minutes) and slice it against the grain.
